Krazy Kitchen Mom Tips
- SHORT CUT: Although I am always a proponent of using fresh vegetables, if you are in a hurry, use a bag of frozen mixed vegetables instead.
- Extra virgin olive oil can be used as a substitute for sesame oil; however, sesame oil gives the rice a nuttier flavor.
- I like to make large batches of rice in my pressure cooker and store them in serving-sized zip-top bags in the freezer. When a recipe calls for rice, take a bag out of the freezer 30-60 minutes ahead of time and it’s ready to be warmed and served. Or take a bag out the night before and place it in the refrigerator to thaw overnight.
- I find that cold rice is best for getting a crispy fried rice dish.
- I also recommend buying 2 rotisserie chickens at a time. After removing the skin and chicken meat, store it in zip-top bags in the freezer and it’s ready to thaw and use at any time.
