My rotisserie chicken fried rice recipe is a convenient meal that can be enjoyed any time of day. Whether you are having a romantic dinner for two or a large family gathering, our rotisserie chicken fried rice is the perfect choice to make any meal special. It’s the perfect combination of deliciousness and convenience.

Hint: This recipe makes great leftovers too.
Ingredients
- 1 tbsp sesame oil (can substitute olive oil)
- 1/2 onion – diced (1/2 cup)
- 2 carrots – peeled and diced (1 cup)
- 1 red bell pepper – diced (3/4 cup)
- ½ teaspoon minced garlic
- 2 large eggs
- 2-3 cups rotisserie chicken – diced
- ½ bag frozen peas
- 4 cups cooked and cooled rice
- 6 tbsp low-sodium cup of soy sauce
- Sesame seed for garnish
Let’s Make Rotisserie Chicken Fried Rice
- Cook and cool the rice at room temperature or prepare rice a day or two ahead and store it in the refrigerator.
- Peel and dice the carrots into small pieces.
- Chop the bell pepper and onion into small pieces.
- In a large skillet, heat sesame oil on medium-high heat.
- Add the carrots, pepper, and onion, and cook for 2-4 minutes.
- Reduce the heat to medium and whisk the eggs in a separate bowl. Add whisked eggs and cook until scrambled, stirring while cooking.
- Add the rotisserie chicken.
- Add the minced garlic and stir.
- Add the rice, rice, and peas.
- Add the soy sauce and stir.
- Use a spatula to mix and continue to cook until the rice turns light brown and crispy.
- Garnish with sesame seeds.
Krazy Kitchen Mom Tips
- SHORT CUT: Although I am always a proponent of using fresh vegetables, if you are in a hurry, use a bag of frozen mixed vegetables instead.
- Extra virgin olive oil can be used as a substitute for sesame oil, however, sesame oil gives the rice a nuttier flavor.
- I like to make large batches of rice in my pressure cooker and store them in serving-sized zip-top bags in the freezer. When a recipe calls for rice, take a bag out of the freezer 30-60 minutes ahead of time and it’s ready to be warmed and served. Or take a bag out the night before and place it in the refrigerator to thaw overnight.
- Cold rice is best for getting a crispy fried rice dish.
- I also recommend buying 2 rotisserie chickens at a time. After removing the skin and chicken meat, store it in zip-top bags in the freezer and it’s ready to thaw and use at any time.
