Ingredients
- 6-8 large sea scallops
- Salt
- Pepper
- 2 tbsp butter
- 2 tbsp extra virgin olive oil
- Juice from 1 small lemon or ½ large lemon
- Fresh parsley for garnish
Let’s Make Lemon Butter Scallops
- Pat the scallops dry with a paper towel.
- Remove and discard the small flap on the side of the scallops (this is called the beard).
- Melt 1 tbsp butter and 1 tbsp olive oil in a skillet on medium-high heat.
- Add scallops and sear for 3 minutes without flipping or touching. They should turn golden brown.
- Turn the scallops over and sear for another 3 minutes on the reverse side.
- Transfer the scallops to a plate.
- Add the remaining butter and olive oil to the skillet.
- Add lemon juice and whisk for 1 minute.
- Add scallops back to the skillet to rewarm.
- Transfer to a serving plate, pour on any remaining juices in the pan, and garnish with fresh parsley.
