These muffins have all of the comfort flavors of Mom’s homemade banana bread with a crunchy granola topping.

Muffin Ingredients
- 2-3 very ripe bananas
- Flour, salt, melted butter
- Baking soda
- Brown sugar
- Sugar
- Vanilla extract
- Egg
- Chopped walnuts (chocolate chips, blueberries) – optional
Granola Topping Ingredients
- Granola – store-bought or homemade
- Flour
- Melted butter
Let’s Make Banana Bread Muffins with Granola Topping
- Whisk together flour, salt, and baking soda and set aside.
- Mash bananas in a medium-sized bowl.
- Stir in melted butter and egg.
- Add brown sugar and mix.
- Add white sugar and mix.
- If you are adding nuts or chocolate chips, add them next.
- Stir in dry flour ingredients 1/2 cup at a time until fully combined.
- Scoop 5-6 tablespoons of the banana bread dough into muffin papers.
- Top the muffins with 2 tablespoons of the granola mixture.
- Bake at 350° for 40-45 minutes.
Krazy Kitchen Mom Tips
- 2-3 mashed bananas should yield a little less than a cup.
- To ripen bananas that are not yet ripe enough, place them in a paper lunch bag overnight. They should be ripe in the morning.
- I recommend using large muffin liners or cupcake papers for this recipe.
- Use any type of store-bought granola for the topping.
