These muffins have all of the comfort flavors of Mom’s homemade banana bread with a crunchy granola topping.

  • Easy to customize – add walnuts or pecans, chocolate chips, or blueberries.
  • These muffins are easy to freeze so you will want to make a double batch.

Muffin Ingredients

Ingredients needed to make Banana Bread Muffins
  • 2-3 very ripe bananas
  • Flour, salt, melted butter
  • Baking soda
  • Brown sugar
  • Sugar
  • Vanilla extract
  • Egg
  • Chopped walnuts (chocolate chips, blueberries) – optional

Granola Topping Ingredients

  • Granola – store-bought or homemade
  • Flour
  • Melted butter

Let’s Make Banana Bread Muffins with Granola Topping

  1. Whisk together flour, salt, and baking soda and set aside.
  2. Mash bananas in a medium-sized bowl.
  3. Stir in melted butter and egg.
  4. Add brown sugar and mix.
How to make Banana Bread Muffins step 1
  1. Add white sugar and mix.
  2. If you are adding nuts or chocolate chips, add them next.
  3. Stir in dry flour ingredients 1/2 cup at a time until fully combined.
How to make Banana Bread Muffins step 2
  1. Scoop 5-6 tablespoons of the banana bread dough into muffin papers.
  2. Top the muffins with 2 tablespoons of the granola mixture.
  3. Bake at 350° for 40-45 minutes.

Krazy Kitchen Mom Tips

  • 2-3 mashed bananas should yield a little less than a cup.
  • To ripen bananas that are not yet ripe enough, place them in a paper lunch bag overnight. They should be ripe in the morning.
  • I recommend using large muffin liners or cupcake papers for this recipe.
  • Use any type of store-bought granola for the topping.

Ingredients
  

Muffins
  • 2-3 very ripe bananas

  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg – slightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1-1/2 cups flour
  • 1 cup chopped walnuts – OPTIONAL
Granola Topping
  • 2 tbsp flour
  • 1 cup granola – homemade or store bought
  • 2 tbsp melted butter

Method
 

  1. Preheat oven to 350°.
  2. Whisk together flour, salt, and baking soda and set aside.
  3. Mash bananas in a medium-sized bowl.
  4. Stir in melted butter and egg.
  5. Add brown sugar and mix.
  6. Add white sugar and mix.
