Banana Bread Muffins with Granola Top

Ingredients 

Muffins

  • 2-3 very ripe bananas
  • 1/3 cup melted butter
  • pinch of salt
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg - slightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1-1/2 cups flour
  • 1 cup chopped walnuts - OPTIONAL

Granola Topping

  • 2 tbsp flour
  • 1 cup granola - homemade or store bought
  • 2 tbsp melted butter

Instructions

  • Preheat oven to 350°.
  • Whisk together flour, salt, and baking soda and set aside.
  • Mash bananas in a medium-sized bowl.
  • Stir in melted butter and egg.
  • Add brown sugar and mix.
  • Add white sugar and mix.
  • If you are adding nuts or chocolate chips, add them next.
  • Stir in dry flour ingredients 1/2 cup at a time until fully combined.
  • Scoop 5-6 tablespoons of the banana bread dough into large muffin papers.
  • Top the muffins with 2 tablespoons of the granola mixture.
  • Bake for 40-45 minutes.

Notes

Krazy Kitchen Mom Tips 
  • I recommend using large muffin liners or cupcake papers for this recipe.
  • 2-3 mashed bananas should yield a little less than a cup.
  • To ripen bananas that are not yet ripe enough, place them in a paper lunch bag overnight. They should be ripe in the morning.
  • Use any type of store-bought granola for the topping.
