Preheat oven to 350°.
Whisk together flour, salt, and baking soda and set aside.
Mash bananas in a medium-sized bowl.
Stir in melted butter and egg.
Add brown sugar and mix.
Add white sugar and mix.
If you are adding nuts or chocolate chips, add them next.
Stir in dry flour ingredients 1/2 cup at a time until fully combined.
Scoop 5-6 tablespoons of the banana bread dough into large muffin papers.
Top the muffins with 2 tablespoons of the granola mixture.
Bake for 40-45 minutes.
