Why You Should Make Roasted Pears with Blue Cheese
This recipe is a unique combination of sweet and savory flavors that come alive when combining soft, baked pears with creamy blue cheese and crunchy walnuts.

Ingredients
Roasted Pears
- 1 large Bosc pear
- 3 oz. blue cheese (substitution: Gorgonzola cheese)
- 1 tbsp extra virgin olive oil
- ¼ cup chopped walnuts
- 3-4 fresh thyme sprigs plus more for garnish
- 1 tbsp honey for servings
- Coarse sea salt
Salad
- 1-1/2 cup spring mix lettuce
- 1 tbsp extra virgin olive oil
- 1 tbsp pear-flavored or regular balsamic vinegar
- Pinch of coarse salt
- Pinch of cracked black pepper
The Best Types of Pears to Use for Cooking and Baking
We recommend using Bosc, Bartlett, or Anjou pears for this recipe. These varieties are also the most popular and easy to find in most grocery stores and markets year-round.
When selecting pears to cook, make sure they are firm and still ripe. Gently press the top of the pear at the stem, if it’s a little soft but firm, the pear is ripe. Do not buy or use pears that are soft because that means they have over-ripened. Also, select pears that are not bruised or blemished.
Let’s Make Roasted Pears with Blue Cheese
- Preheat oven to 400°.
- Add mixed greens in a small bowl and toss with extra virgin olive oil and balsamic vinegar—lightly salt and pepper.
- Slice the pear in half lengthwise.
- Remove the core and discard it.
- Brush the inside of the sliced pear with extra virgin olive oil. Sprinkle with coarse salt.
- Place the pears face down in a shallow baking dish or sheet pan and brush the outside of the pear with olive oil
- Roast for 25 minutes.
- White pears are roasting, toast walnuts in a small stove-top skillet.
- Remove pears from the oven and turn them cut side up.
- Top each half with blue cheese and toasted walnuts.
- Return to oven for 6-7 minutes, until the cheese melts.
- Allow them to rest for 5 minutes before serving.
- Serve on top of mixed green salad, drizzle with honey, and garnish with fresh thyme.
