Ingredients
- Nectarines
- Cherries
- Cherry tomatoes
- Baby spinach
- Burrata cheese
- Sugar
- Salt and Pepper
- Extra virgin olive oil
- Balsamic glaze
Let’s Make Burrata Nectarine Spinach Salad
- Pit the cherries and cut them in half.
- Slice the cherry tomatoes in half.
- Toss the cherries and the cherry tomato halves in ¾ tbsp sugar and salt; set aside.
- Slice the nectarines and toss the slices with the remaining ¾ tbsp sugar; set aside.
- Arrange the baby spinach on a serving platter or in a large flat bowl.
- Top the spinach with the burrata, by pulling it in half with your hands and stretching it across the center.
- Arrange the nectarines around the burrata.
- Add cherries and cherry tomatoes.
- Drizzle with extra virgin olive oil and balsamic glaze.
- Sprinkle with black pepper.
Krazy Kitchen Mom Tips
- Store burrata cheese in the container with liquid until ready to use. Remove the burrata 15 minutes before using it so it’s nice and creamy when you spread it out.
- There are many different hacks to pit fresh cherries, but I find it best to slice them in half and remove the seed from one of the halves with your finger.
- I don’t mix the cherries/tomatoes with the peaches prior to building the salad so that I maintain the nice bright yellow color of the peaches.
