Ingredients
- Mini Croissants – If you cannot find mini croissants, you can use the large croissant. I would recommend cutting the large ones in half before servings.
- Lemon curd – I prefer to use store-bought lemon curd for ease of preparation and the fact that I always have 1-2 jars in my pantry.
- Not Shown Ingredients – Additional powdered or confectioners sugar, pink and yellow food coloring, and fresh lemon juice.
Let’s Make Strawberry Lemon Croissants
- Mix powdered sugar, lemon curd, and cream cheese with a hand mixer until smooth and creamy.
- Slice strawberries.
- Spread one-half of the croissants with some of the cream cheese mixture.
- Layer strawberries on top of the cream cheese and put the tops on the croissants.
- Place croissants on a grill pan or cooling rack with a pan or parchment below it so they are ready to be glazed.
- Divide the remaining powdered sugar and lemon juice into two small bowls.
- Add yellow food coloring to one bowl and pink to the other and stir. Add additional food coloring as needed to obtain the desired color.
- Drizzle the pink and yellow glaze over the croissants.

- To prep ingredients in advance, slice strawberries and make the lemon cream cheese mixture. Store both in the refrigerator for up to 2 days. Remove the lemon cream cheese from the refrigerator 1 hour prior to assembling the croissants.
- I recommend that you serve and eat these within 2-3 hours of assembling them.

Strawberry Lemon Croissants

- 6 mini store-bought croissants
- 4 oz cream cheese – softened at room temperature
- 1/3 cup lemon curd
- 1/3 cup confectioners sugar
- 1/2 pint cleaned fresh strawberries
For Glaze
- 1 cup powdered sugar
- 2-4 tbsp fresh squeezed lemon juice
- yellow and pink food coloring
Instructions
- Mix powdered sugar, lemon curd, and cream cheese with a hand mixer until smooth and creamy.
- Slice strawberries.
