Cranberry Orange Coffee Cake

Description

My Cranberry Orange Coffee Cake is made with Greek yogurt, cinnamon, cardamom, and orange zest. And it’s full of zesty fresh cranberries.

Ingredients

For the coffee cake:

  • 2 eggs
  • 4 TBS softened butter
  • 1/4 cup canola or vegetable oil
  • 1/2 cup milk
  • 1/2 plain Greek yogurt
  • Zest from one orange
  • 11/2 teaspoon vanilla extract
  • 21/2 cups flour plus 1 TBS of flour
  • 11/2 cups sugar plus 1 TBS of sugar
  • 1 Teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 11/2 teaspoons of baking powder
  • 11/2 cups fresh cranberries

For the glaze:

  • 11/4 cups of confectioners sugar
  • 36 TBS of orange juice (start with 3 and add more as needed; the glaze should be on the thick side)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cardamom

Instructions

  1. Preheat oven to 400°
  2. In a small bowl, toss cranberries with 1TBS sugar and 1 TBS flour; set aside.
  3. With a stand mixer or a hand mixer, mix eggs, butter, oil, milk, yogurt, orange zest, and vanilla.
  4. Add sugar and mix again.
  5. Add flour, baking powder, cinnamom, and cardamom and thoroughly mix.
  6. By hand, gently fold in the sugar/flour coated cranberries.
  7. Divide batter between 2 lined cake or bread tins.
  8. Bake for 19-21 minutes.
  9. Cool completely before glazing.

For the glaze:

  1. Add confectioners sugar to a medium-sized bowl.
  2. Stir in cinnamom and cardamom
  3. Add orange juice 1 TBS at a time.
  4. Stir, adding orange juice, as needed until desired consistency.
