Freezing and Storing Cranberry Orange Coffee Cake

Freezing

This coffee cakes freeze nicely. Let it cool completely and do not add the glaze. Cover it with wax paper or plastic wrap. Then wrap it again in aluminum foil. Place in a zip-top bag and freeze for up to one month.

To thaw, remove it from the freezer and place it wrapped in the refrigerator for 24 hours. Glaze and decorate it and it and it’s ready for your breakfast, brunch, or holiday party.

Storing Without Freezing

Cover the glazed undecorated coffee cake with plastic wrap and store it in the refrigerator for up to 3 days. Take it out of the refrigerator for 1-2 hours before serving. Remember to decorate with Sugar Cranberries or fresh cranberries for a more festive presentation.

CRANBERRY COFFEE CAKE WITH ONE SLICE CUT

Krazy Kitchen Mom Tips

  1. Toss fresh cranberries in 1 tbsp each of sugar and flour before adding to the batter. The cranberries will stay suspended evenly throughout the coffee cake without all of them dropping to the bottom. Use this technique for any type of bread or cake that uses fresh or frozen berries.
  2. Sour cream can be substituted for Greek yogurt. Both add a tanginess to the flavor and help for a moister texture.
  3. Decorate this coffee cake with Sugar Cranberries for a very festive look.
