This Cranberry Orange Coffee Cake is made with Greek yogurt, cinnamon, cardamom, and orange zest. And it’s full of zesty fresh cranberries.

- Vanilla extract

All you need is sugar, water, and fresh cranberries.
Freezing and Storing Cranberry Orange Coffee Cake
Freezing
This coffee cakes freeze nicely. Let it cool completely and do not add the glaze. Cover it with wax paper or plastic wrap. Then wrap it again in aluminum foil. Place in a zip-top bag and freeze for up to one month.
To thaw, remove it from the freezer and place it wrapped in the refrigerator for 24 hours. Glaze and decorate it and it and it’s ready for your breakfast, brunch, or holiday party.
Storing Without Freezing
Cover the glazed undecorated coffee cake with plastic wrap and store it in the refrigerator for up to 3 days. Take it out of the refrigerator for 1-2 hours before serving. Remember to decorate with Sugar Cranberries or fresh cranberries for a more festive presentation.

- Toss fresh cranberries in 1 tbsp each of sugar and flour before adding to the batter. The cranberries will stay suspended evenly throughout the coffee cake without all of them dropping to the bottom. Use this technique for any type of bread or cake that uses fresh or frozen berries.
- Sour cream can be substituted for Greek yogurt. Both add a tanginess to the flavor and help for a moister texture.

Cranberry Orange Coffee Cake
Ingredients
For the coffee cake:
- 2 eggs
- 4 tbsp softened butter
- 1/4 cup canola or vegetable oil
- 1/2 cup milk
- 1/2 cup plain Greek yogurt
- Zest from one orange
- 1-1/2 teaspoon vanilla extract
- 2-1/2 cups flour plus 1 TBS of flour
- 1-1/2 cups sugar plus 1 TBS of sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon cardamom
- 1-1/2 teaspoons of baking powder
- 1-1/2 cups fresh cranberries
For the glaze:
- 1 cups of confectioners sugar
- 5-6 tbsp of orange juice start with 3 and add more as needed; the glaze should be on the thick side
Instructions
- Preheat oven to 375°
- In a small bowl, toss cranberries with 1TBS sugar and 1 TBS flour; set aside.
- With a stand mixer or a hand mixer, mix eggs, butter, oil, milk, yogurt, orange zest, and vanilla.
- Add sugar and mix again.
- Add flour, baking powder, cinnamom, and cardamom and thoroughly mix.
- By hand, gently fold in the sugar/flour coated cranberries.
- Divide batter between 2 lined cake or bread tins.
- Bake for 45-50 minutes.
- Cool completely before glazing.
For the glaze:
- Add confectioners sugar to a medium-sized bowl.
- Add orange juice 1 tapblespoon at a time.
- Stir, adding orange juice, as needed until desired consistency.
