Ingredients
- 2 cups rotisserie chicken – diced
- 1 cup thinly sliced celery
- 1 cup thinly sliced carrots
- 1 cup croutons
- 1 cup shredded cheddar cheese
- 1 cup mayonnaise
- ½ cup almond slices
- 1 tbsp lemon juice
- ½ teaspoon salt
- ½ teaspoon pepper
Let’s Make Rotisserie Chicken Salad Casserole
- Preheat oven to 400°.
- Toast almonds and set aside.
- Dice chicken and place it in a large bowl.
- Slice celery and carrots and add them to the bowl with the chicken.
- Add ½ cup cheese, ½ cup breadcrumbs, mayonnaise, lemon juice, salt, and pepper in that same bowl. Mix to combine.
- Spray a casserole dish with non-stick spray and spoon in the chicken mixture.
- Top with the remaining ½ cup cheese and ½ cup breadcrumbs.
- Bake for 20 minutes.
How To Make Homemade Croutons
- Dice 2-3 slices of bread.
- Place on a foil-covered baking sheet.
- Drizzle with 1-2 tbsp olive oil and some salt.
- Bake at 375° for 12 minutes.
