Ingredients
Meatballs
- 1 lb. ground chicken breast
- 3 oz. blue cheese – crumbled
- ¼ cup Panko breadcrumbs
- 1 stalk celery – diced small
- 1 teaspoon minced garlic
- 1 egg
- ¼ cup buffalo hot sauce
- Salt and pepper to taste
Sauce
- 2/3 cup buffalo hot sauce
- 3 tbsp butter
- 1 teaspoon cracked black pepper
Let’s Make Buffalo Chicken Meatballs
- Preheat the broiler on high.
- Whisk the egg and buffalo hot sauce until combined.
- Stir in garlic, blue cheese crumbles, and diced celery.
- Add bread crumbs and salt, and pepper, and fold the mixture with your hands.
- Form 12 balls and place them on a broiler pan.
- Broil for 12-15 minutes or until they turn light brown – watch them carefully so they do not burn.
- Flip them over and broil for another 8 minutes. Some of the blue cheese may start to ooze out but that’s fine.
- Cool for 10 minutes.
- While the meatballs are cooling, make the sauce by adding the buffalo sauce, butter, and pepper to a microwave dish and microwaving for 30 seconds or until the butter melts. Stir to combine and toss the meatballs in the warm sauce.
- Serve the meatballs with extra buffalo buffer sauce, blue cheese dressing, and celery sticks.

- Broilers can be touchy, so I recommend watching these carefully and cooking them until they turn light brown on each side.
- It’s fine if some of the blue cheese oozes out of the meatballs while they are cooking.
