Inspired by the bold flavors of a grinder sandwich, this chopped version packs all the crunch, zest, and deli-style goodness, minus the bread!
It’s the perfect salad for your next gathering, BBQ, or casual lunch.

Ingredients
Salad
- 1 head of iceberg lettuce
- ¼ lb. hard salami
- ¼ lb. mozzarella cheese
- 1/3 lb. ham
- 2-3 tomatoes or ½ pint cherry tomatoes (1 cup diced tomato)
- ½ cup mild banana peppers
- ¼ cup pickled diced jalapenos
Dressing
- ½ cup mayonnaise
- 1/3 cup red wine vinegar
- 1 tbsp juice from the banana pepper jar
- 1 teaspoon oregano
- 2 tbsp finely grated parmesan cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Let’s Make Grinder Chopped Salad
- Chop lettuce into small bite-sized pieces and add it to a large bowl.
- Dice tomatoes.
- Dice banana peppers.
- Dice mozzarella, salami, and ham.
- Add tomatoes and banana peppers to the bowl with the lettuce.
- Add jalapenos.
- Add mozzarella and meat to the lettuce bowl.
- Mix all the dressing ingredients and spoon it over the salad.
- Gently toss the salad making sure everything is covered in dressing.
- Transfer the salad to a large serving bowl or platter.
- Serve immediately or refrigerate for 2 hours.

- Purchase the deli meats and mozzarella cheese from the deli counter by asking for blocks rather than slices.
- Be sure to chop all of the ingredients into bite-sized pieces so you get all of the flavors in each bite.
- This salad is best served ice-cold. Refrigerate it for 1-2 hours before serving to chill it.
- Store this salad in an airtight container in the refrigerator for up to 3 days.
- You can also serve this salad in a sub roll or on sliced Italian bread.
