Let’s Make Cucumber Pepper Salad
- Slice the cucumber lengthwise into four long quarter pieces. Slice the quarters into bite-sized pieces.
- Slice the mini peppers, remove the seeds, and cut them into bite-sized pieces.
- Slice the cherry tomatoes in half (or in quarters if they are large).
- Add salt and pepper to taste.
- Toss the vegetables with 2-3 tablespoons of sesame or Asian-style salad dressing.
