This is the easiest homemade baked “cookie” you’ll ever make! Hot out of the oven, grab spoons and your friends and dig in.

Why You’ll Love This Recipe

  • It has an ooey-gooey inside with crispy edges; it’s everything you want in a sweet treat.
  • No rules here – this blondie is made for sharing. Kids and grownups will be thrilled when you pull this out of the oven.
  • No need to scoop or roll cookie dough, no need to chill the dough. It’s a super simple recipe.

Let’ Make the Skillet Blondie Cookie

  1. Using a hand mixer or stand mixer, mix butter, brown sugar, eggs, and vanilla until they are smooth and creamy.
  2. Add the flour, baking powder, and salt.
  3. Mix for 2-3 minutes, scraping down the sides of the bowl as needed.
  4. Add chocolate chips or chocolate candies. (Save 1/2 cup of the candies for the top of the blondie.)
  5. Spray a skillet with non-stick cooking spray. If you are using a well-seasoned cast-iron skillet, no need to spray it.
  6. Scoop the blondie dough into the skillet and spread it out evenly to the edges.
  7. Place the extra candies on the top of the blondie dough.
  8. Bake at 350° for 40-45 minutes.

  • Make sure the butter is room temperature.
  • Don’t over-bake the blondie, it should be soft and gooey on the inside and crispy around the edges.
  • This recipe is easy to adjust – add nuts, dried fruit, butterscotch chips, mint chocolate chips, peanut butter chips – use your imagination.
  • Serve the blondie warm with ice cream or cut pie-shaped slices for each person.
