This chicken salad recipe is my all-time favorite way to use rotisserie chicken. Although it only has a few ingredients, it’s the perfect combination of creaminess, chicken, and crunchy vegetables.
Not only does it require minimal effort to make, but this dish provides a great source of lean protein and fresh vegetables.

Ingredients
- 4 cups rotisserie chicken
- 2 carrots
- 2 celery stalks
- 4 tbsp mayonnaise
- Sea salt and coarse black pepper
Let’s Make Rotisserie Chicken Salad
- Cut carrots and celery into very small pieces.
- Combine all ingredients in a bowl.
- Chill in the refrigerator for 1-2 hours.

- Be sure to taste the chicken salad before refrigerating; add more salt and pepper or mayonnaise if desired.
- Store in an airtight container in the refrigerator for 4-5 days.
- I like to buy 2-3 rotisserie chickens at a time. I remove the chicken from the bones, discard the carcass, and freeze the chicken in zip-top bags. To thaw, place in refrigerator overnight and the chicken is ready for any recipe that uses rotisserie chicken.
