Ingredients
For the Avocado
- Whole avocado
- Pico de Gallo salsa
- Fresh cilantro
- Whole lime
For the Cilantro Vinaigrette
- Chopped cilantro stems
- Fresh lime juice
- Avocado oil (substitute olive oil)
- Honey
- Salt and pepper
Let’s Make a Whole Avocado Salad
- Place cilantro stems, lime juice, avocado oil, honey, salt, and pepper in a small bowl or jar and whisk until blended. Set aside.
- Cut avocado in half, discard the large pit and peel the halves.
- Lay the avocado halves face down on a plate.
- Drizzle the dressing over avocado.
- Top each half with 1 tbsp salsa.
- Garnish with jalapeno slices, cilantro leaves, and lime slices.

- Wash the outside of avocados like you would any other fruit or vegetable.
- Unripe avocados will ripen in 1-2 days by storing them in a brown paper lunch sack on the kitchen counter or windowsill.
- To stop avocados from browning, drizzle them with lemon or lime juice. The acidity will keep them green longer.
