Ingredients

  • ½ lb. block genoa salami
  • ½ lb. block mozzarella cheese
  • 1 cup chickpeas (garbanzo beans)
  • 1 cup chopped artichoke hearts
  • 1 cup sliced cherry tomatoes
  • 1 cup seeded green olives
  • 1 cup seeded kalamata olives
  • 2 cups chopped romaine lettuce
  • ½ cup cocktail onions
  • ½ cup chopped banana pepper rings
  • Peperoncini peppers for garnish

Let’s Make Italian Chopped Salad

  • Drain both the chickpeas and artichoke hearts.
  • Chop and slice all of the ingredients into bite-sized pieces and add them to a bowl.
  1. Gently toss the ingredients and add your favorite vinaigrette.

  • For a shortcut, dice pre-sliced salami and mozzarella cheese.
  • Be sure to use only seeded olives.
  • Taste before adding salt because olives and salami are already salty.
  • Make ahead by chopping ingredients and storing them in separate zip-top bags in the refrigerator.
  • Be creative – mix and match your favorite ingredients.

  • 1/2 lb. block of genoa salami from the deli
  • 1/2 lb. block mozzarella cheese from the deli
  • 1 cup chickpeas, drained and rinsed
  • 1 cup artichoke hearts, drained
  • 1 cup cherry tomatoes
  • 1 cup green olives
  • 1 cup kalamata olives
  • 2 cups romaine lettuce
  • 1/2 cup cocktail onions, drained
  • 1/2 cup banana pepper rings

Method
