Crispy Roasted Herb Potatoes – soft, crispy, cheesy, herby roasted potatoes. These are perfect as a side dish or an appetizer with dipping sauce.
Do not settle for mushy potatoes, especially when you can make these Crispy Roasted Herb Potatoes in 35 minutes. They are perfectly seasoned with dried Italian seasoning and sprinkled with finely grated parmesan cheese. And don’t forget the parsley – it’s not just for garnish – it’s for flavor too.
Let’s talk parsley for a minute
So I just said, don’t forget the parsley because it’s an important ingredient in this recipe. When I was a young girl, my uncle used to eat fresh parsley after his meals. He said it made his breath fresh. So naturally, my sister and I used to grab handsful of fresh parsley to eat after dinner when we were visiting him. But I actually really didn’t like it and just pretended to eat it. BUT now, I love fresh parsley and use it in a lot of dishes. It has a slightly bitter taste that is a flavor enhancer much like fresh lemon juice. I think it goes perfectly with the herby and cheesiness of these potatoes.
I love this recipe because it can be a hearty side dish with dinner or it can be a simple appetizer if you serve it hot or at room temperature with a dipping sauce. I think it’s also pretty enough to go with a holiday ham.
Dipping Sauce Ingredients
I love this dipping sauce and it’s got a secret ingredient that adds a little umami and no one would ever guess what it is.
- Mayonnaise
- Sour Cream
- Fresh parsley
- Seasoning salt (I use Lawry’s brand)
- Dill Pickel Juice – THE SECRET INGREDIENT!

These potatoes cook for 40 minutes but you will need to stir them every 10 minutes so all of the sides get brown and crispy. Set your timer for 10 minutes, stir and then set it for another 10 minutes and repeat.

Ingredients
For the Potatoes:
- 1 lb. small red potatoes
- 1 TBS extra virgin olive oil
- 1/2 cup finely grated parmesan cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried Italian seasoning
For the Dipping Sauce:
- 2 TBS mayonnaise
- 2 TBS sour cream
- 1 TBS chopped fresh parsley
- 1 teaspoon seasoning sauce (I use Lawry’s brand)
- 1 teaspoon dill pickle juice
Instructions
For the Potatoes:
- Preheat oven to 350°
- Wash potatoes and then dry them with a paper towel.
- Toss the potatoes with the olive oil and sprinkle with the salt, pepper, parmesan, and Italian seasoning.
- Roast for 40 minutes, stirring them every 10 minutes so all of the sides get brown and crispy.
For the Dipping Sauce:
- Mix all of the ingredients together and chill in the refrigerator for 45-60 minutes.
