Crispy Roasted Herb Potatoes


Crispy Roasted Herb Potatoes – soft, crispy, cheesy, herby roasted potatoes. These are perfect as a side dish or an appetizer with dipping sauce.



For the Potatoes:

  • 1 lb. small red potatoes
  • 1 TBS extra virgin olive oil
  • 1/2 cup finely grated parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning

For the Dipping Sauce:

  • 2 TBS mayonnaise
  • 2 TBS sour cream
  • 1 TBS chopped fresh parsley
  • 1 teaspoon seasoning sauce (I use Lawry’s brand)
  • 1 teaspoon dill pickle juice


For the Potatoes:

  1. Preheat oven to 350°
  2. Wash potatoes and then dry them with a paper towel.
  3. Toss the potatoes with the olive oil and sprinkle with the salt, pepper, parmesan, and Italian seasoning.
  4. Roast for 40 minutes, stirring them every 10 minutes so all of the sides get brown and crispy.

For the Dipping Sauce:

  1. Mix all of the ingredients together and chill in the refrigerator for 45-60 minutes.
