This beautiful healthy sandwich is an inviting combination of fresh veggies and blended cottage cheese.
Why We Love This Sandwich
This is my go-to summer sandwich. It’s full of flavor and texture, full of fresh garden vegetables, making it a healthy and tasty meal.
It also has a hidden protein ingredient, Blended Cottage Cheese.
Ingredients
- Whole grain or seeded bread – I like to use hearty bread that will hold up to the veggies.
- Blended Cottage Cheese – this whipped cottage cheese is a viral sensation and an excellent way to work a smooth protein into many recipes.
- English cucumber
- Tomatoes
- Avocado
- Salt, pepper, and olive oil
Let’s Make an Open-Face Garden Veggie Sandwich
- Toast the bread.
- Slice the tomatoes and cucumber.
- Smear 1 tbsp of blended cottage cheese on both slices of bread.
- Lightly salt and pepper the cucumbers, tomatoes, and blended cottage cheese (already on bread slices).
- Slice the avocado
- Layer the veggies onto the cottage cheese bread: lettuce, cucumbers, tomatoes, and sliced avocado.
- Add more salt and pepper, drizzle with olive oil, and serve immediately.

Open-Face Garden Veggie Sandwich
Ingredients

- 2 tbsp blended cottage cheese
- 10 slices English cucumber
- 8 slices small tomato
- 1/2 avocado
- salt and pepper to taste
- drizzle extra virgin olive oil
Instructions
