This salad is as beautiful to look at as it is to eat. The freshness jumps off the plate with the bright juicy fruits and the tart goat cheese drizzled lightly with vinegar and olive oil.
Mango Blueberry Salad is so fresh it might just be your new favorite summer salad.
Why This Summer Salad Works
- Blueberries and mangos are in season right now and you can find them everywhere. They are sweet, juicy, and colorful.
- The bright sweet flavors of the mango and blueberry combine fantastically with tart goat cheese and a honey vinaigrette.
- It can be served as a main dish salad for a light lunch or brunch.
- It also goes great as a side salad with burgers or grilled chicken.
Ingredients
- Butter Lettuce or Bib Lettuce – I highly recommend using soft lettuce for this recipe and butter or bib lettuce work the best.
- Fresh Mango and Fresh Blueberries – since the fruits are the star of the salad, make sure you use fresh fruit.
- Honey Goat Cheese – I love honey-flavored goat cheese. If you cannot find honey-flavored in your grocery store, you can certainly use plain goat cheese. You can even drizzle the goat cheese with honey to give it a sweeter flavor.
- Olive Oil – I like to use extra virgin olive oil in all of my salad dressings. I find that is it smooth and light with more of a rich olive taste than regular olive oil.
How To Make This Salad
- Wash and dry the lettuce and arrange it on a large plate.
- Dice the mango and lay it directly on the lettuce in the center.
- Next, add the blueberries to the center on top of the mango.
- Break apart pieces of the goat cheese apart with your fingers and sprinkle them around the salad.
- Drizzle the entire salad with the vinegar, olive oil, and honey. Sprinkle it with the salt and garnish with black poppy seeds.
Alway use your nose! That’s right, just give it a big sniff and if you can smell the sweet fruit, you know that it’s ripe. Also give it a slight squeeze. It should be soft, but not mushy.
I think feta cheese would go very well with this recipe. Also, tiny mozzarella pearl cheese would also go nicely. You want to make sure that you use a soft cheese that you can break or cut into small pieces.
Yes, you can absolutely make it ahead of time. Follow steps 1-4 to assembly the salad, cover it with plastic wrap and place it in the refrigerator. When you are ready to serve it, top it with the vinegar, olive oil, honey, salt, and poppy seeds.

- To make the “shelf life” of your goat cheese last longer. After opening, wrap it tightly in plastic wrap and store it in the refrigerator. Each time you use some, wrap it in a fresh new piece of plastic wrap.
- Store mangos on the countertop before they are cut. They will last about 5 days. Once with are cut, you can store the cut-up fruit in an air-tight container in the refrigerator for 3-4 days.
- I keep extra butter lettuce fresh for up to a week by washing it, drying it, and then storing it in a ziptop bag in the refrigerator for 1 week. I add a dry paper towel inside the ziptop bag along with the lettuce to help remove excess moisture.

Ingredients

- 4-6 leaves of butter lettuce
- 3 TBS honey goat cheese cut into small pieces reserve 1 TBS for the dressing
