Juicy chicken and tomatoes marinated and baked in a zesty Italian dressing served over spaghetti deliver a burst of flavor with every bite.

Ingredients
Dressing/Marinade
- .60 oz dry zesty Italian dressing mix
- ½ cup olive oil
- ¼ cup red wine vinegar
- 3 tbsp water
Chicken and Pasta
- 2 chicken breasts
- 1 pint cherry tomatoes
- ½ lb. spaghetti noodles
- 1 tbsp capers
- ¼ teaspoon red pepper flakes
- Basil leaves
Let’s Make Italian Dressing Chicken and Pasta
Dressing/Marinade
- Place all ingredients into a jar and shake well.
- Place chicken breasts into a zip-top bag, add ¼ cup of the dressing and 2-4 basil leaves, and marinate in the refrigerator for 6-8 hours or overnight.
- Save remaining dressing.
Chicken and Pasta
- Preheat oven to 400°.
- Slice cherry tomatoes in half and place them cut-side down on a large baking sheet.
- On the same baking sheet toss tomato halves and capers with 3 tablespoons of the dressing mix. Set aside.
- Add 1 tbsp olive oil to a large skillet, and brown chicken for 2-3 minutes on both sides. Discard any excess marinate in the bag.
- Do not clean the skillet, set it aside.
- Nestle chicken between tomatoes and capers on the baking sheet and roast for 25 minutes.
- While the chicken is roasting, cook the pasta per the box instructions.
- Remove the chicken from the baking sheet and let sit for 3-5 minutes.
- Transfer the pasta to the same skillet used to brown the chicken and add red pepper flakes.
- Carefully pour the tomatoes, capers, and any pan juices from the baking sheet onto the top of the pasta and gently toss to combine.
- Slice the chicken breasts and serve on top of the pasta.
- If desired, drizzle with the remaining dressing.

- It’s best to marinate the chicken overnight; the longer it marinates, the deeper the flavor.
- I recommend roasting the tomatoes cut side down which gives them more cooking surface to carmelize.
