Ingredients
Chicken Ingredients
- 4 chicken thighs
- ½ cup fresh cranberries
- Orange slices
- 1 tbsp honey
- 1 tbsp extra virgin olive oil
- Salt and pepper
Marinade Ingredients
- ¼ cup fresh cranberries
- 1 tbsp brown sugar
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 1 teaspoon soy sauce
- Juice and zest from 1 orange
- Salt and pepper
Let’s Make Cranberry Orange Baked Chicken
To Marinate the Chicken
- Place all of the marinade ingredients into a food processor or blender and blend until smooth.
- Add chicken thighs and marinade to a zip-top bag and marinate for 2-4 hours or overnight.
To Bake the Chicken
- Preheat oven to 375°.
- Add olive oil to a large skillet.
- Remove the chicken from the marinade and reserve the excess liquid.
- Add salt and pepper on both sides of the chicken.
- Place the chicken in the skillet and brown on both sides.
- Pour the excess marinade into the skillet with the chicken.
- Add the fresh cranberries and orange slices to the skillet with the chicken.
- Bake the chicken for 30-35 minutes.
- Turn oven to broil for 3-4 minutes until the skin crisps.
