Cranberry Orange Baked Chicken

Ingredients 

Marinade

  • 1/2 cup fresh cranberries
  • 1 tbsp brown sugar
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 teaspoon soy sauce
  • juice and zest from 1 orange
  • salt and pepper

Chicken

  • 4 bone-in/skin on chicken thighs
  • 1/2 cup fresh cranberries
  • oranges slices
  • 1 tbsp honey
  • 1 tbsp extra virgin olive oil
  • salt and pepper

Instructions

To Marinate the Chicken

  • Place all of the marinade ingredients into a food processor or blender and blend until smooth.
  • Add chicken thighs and marinade to a zip-top bag and marinate for 2-4 hours or overnight.

To Bake the Chicken

  • Preheat oven to 375°.Add olive oil to a large skillet.
  • Remove the chicken from the marinade and reserve the excess liquid.
  • Salt and pepper both sides of the chicken.
  • Place the chicken in the skillet and brown on both sides.
  • Pour the excess marinade into the skillet with the chicken.
  • Add the fresh cranberries and orange slices to the skillet with the chicken.
  • Bake the chicken for 30-35 minutes.
  • Turn oven to broil for 3-4 minutes until the skin crisps.
