I finally got an Instant Pot! After doing some on-line research I chose the LUX60 V3 6 quart model that boasts having 6 appliances in 1 pot – Pressure Cooker, Slow Cooker, Rice Cooker, Sauté, Steamer, Warmer. It even has a setting for cooking cakes and eggs.
So far, I’ve made only three things in my new Instant Pot and my Instant Pot Coconut Lime Rice is number 2. That means I’ve made three things in two days. I can tell you that I am already loving this handy, quick and versatile appliance. It’s a bit bigger than I thought so I did have to find space on my counter top. Also you need to be very careful when using it as you don’t want the intense steam to release under your cabinets. Other than that we are very happy with our purchase.
On to the easy coconut rice recipe. I used coconut milk and chicken stock for the cooking liquid and then finished the rice with toasted coconut and lime zest. I had my husband, Vince be the taste tester and he actually said it was the best rice he had ever tasted.

Cook the perfect rice with the Instant Pot Coconut Lime Rice recipe in just 10 minutes using coconut milk and chicken stock.
Ingredients
*The Rice and liquid measurements are using the rice cup that comes with the Instant Pot
- 3 cups basmati rice
- 2 cups coconut milk
- 2 1/2 cups chicken broth or stock (Vegan substitution: vegetable broth or water)
- 1/3 cup toasted sweetened coconut
- Zest of 4–6 limes (mine were very small so I used 6)
Instructions
- Add the rice, coconut milk and chicken stock to the pot.
- Stir well.
- Cook on rice setting (10 minutes).
While rice is cooking toast sweetened coconut in a small skillet on the stove top
- Turn heat on high.
- Add coconut.
- Cook for approximately 10 minutes, frequently stirring and watching coconut closely so it does not burn.
When rice is done cooking
- Stir together cooked rice, toasted coconut and lime zest.
