Did you know, you can make perfect rice in the Instant Pot? I am head over heels about my Instant Pot. I’m so happy with it I tossed my rice cooker – which was a big deal for me because I loved that rice cooker (sorry that sounds so sappy but it’s true). My Instant Pot even has a “rice” function so I can’t go wrong – perfect rice every time! There is one trick to perfect rice in the Instant Pot or IP, as I call it. You use equal amounts of liquid and rice. So if you are using 1 cup of dry rice, use 1 cup of liquid. It’s that easy!
We love Tex Mex food at our house and I love when Tex Mex restaurants serve the entre with beans and rice. Recently I planned a Tex Mex meal for our family and I really wanted to serve it “restaurant style” with rice and beans as side dishes. However, my family is not really big on Spanish rice I decided to mix it up a bit and I made a Fiesta Rice Salad with Honey Lime Dressing. This salad turned out so good it will now be on our Tex Mex menu from now on. And now that I have my Instant Pot, I can make it for a large crowd with no muss or fuss.

Description
Mexican inspired rice salad with the bold flavor of fire roasted tomatoes, peppers and grilled corn.
Ingredients
For the Salad:
- 5 cups cooked rice (cook rice in an Instant Pot, a rice cooker or on the stove-top)
- 8 multi-colored baby sweet peppers, seeds removed and diced small
- 2 10-ounce cans of fire roasted tomatoes – drained
- 4 ears of grilled corn cut off cob (you can also use 1 bag frozen corn – thawed)
- 1/2 cup chopped cilantro
For the dressing:
- Juice from 3 limes
- 1/4 cup honey
- 1/2 teaspoon each salt and pepper
Instructions
- Place the lime juice, honey, salt, and pepper in a mason jar and shake until thoroughly mixed.
- Place all ingredients in a bowl, drizzle with dressing and, toss.
Notes
This recipe can be served hot, cold or at room temperature.
