A few weekends ago, I told my husband I was going to make breakfast. He was thrilled and asked what we were having. I said “toast”. The look on his face as nothing more than disappointment. But he smiled and said “OK, sounds good” – just because he’s that way (insert smile). You can imagine the look on his face when I came out with this dazzling display of Fancy Breakfast Toast Four Ways.
Fancy Breakfast Toast #1: Whipped Cream Cheese with Pineapple and Blueberries. This is one of my favorites because I love pineapple. I cooked the pineapple slices in some brown sugar and butter and then drizzled the toast with the brown sugar butter sauce. The cream cheese is whipped with honey which adds another sweet flavor dimension that pairs perfectly with the fruit.
Fancy Breakfast Toast #2: Peanut butter with Mixed Berry Compote and Whipped Cream Cheese Swirl. If you love peanut butter and jelly – this is the fancy toast for you. It’s like a grown-up version made with homemade berry compote swirled with the whipped honey cream cheese. All I can say is YUM!
Fancy Breakfast Toast #3: Peanut butter, honey, pineapple, yellow raisins and toasted almond slivers. For this toast, I used that same pineapple, cooked in brown sugar and butter. It goes so well with the peanut butter. The raisins add another layer of sweetness while the almonds provide the crunch. This is my second favorite Fancy Breakfast Toast.
Fancy Breakfast Toast #4: Whipped cream cheese with homemade berry compote with sesame seeds for a little crunch. I like to put cream cheese and jam on my bagels so I thought why not try the same combo with the toast? And yes – it was a great idea.

Ingredients
For the Whipped Cream Cheese
- 6 ounces of cream cheese softened
- 3 TBS honey
For the Brown Sugar Pineapples:
- 4 TBS brown sugar
- 1-ounce butter (I like salted butter for this recipe)
For the mixed berry compote:
- 1 small bag frozen mixed berries
- 1 TBS honey
Instructions
For the Whipped Cream Cheese
- Using a hand mixer, thoroughly blend cream cheese and honey.
For the Brown Sugar Pineapples:
- In a stove-top skillet, add butter and brown sugar.
- Cook on medium until melted.
- Add pineapple slices (I used fresh pineapple) and cook on low for 10 minutes, flipping at the 5-minute mark.
For the mixed berry compote (this recipe will make a lot more than you need for the toast; I store the extra in a glass jar in my refrigerator to use with Greek yogurt):
- In a stove top pan, add berries and honey.
- Stir.
- Cook on medium for 15-20 minutes, stirring occasionally.
- When berries start to break down, mash with a potato masher or a fork.
- Allow to cool completely as they will thicken more when cooling
