Let’s face it, Cracker Barrel hit the nail on the head when they created their Hash Brown Casserole. I wonder if they knew that it would grown to be one of the most sought after copy cat recipes? I call mine Almost Copy Cat Cracker Barrel Hash Brown Casserole because I use a little less butter, I’ve changed the chicken soup to cheese soup and I’ve cut back on the 2 cups of sour cream and just use one. Now I think I’ve hit the nail on the head.
This recipe is so easy and quick to pull tougher, but you’re going to need about an hour because it takes 45 minutes to bake and then you’ll want to let it rest a bit before serving it. Don’t worry – it will still be cheesy and delicious. I serve this with ham and eggs for a casual brunch or as a dinner side dish with a baked ham. You could also add chopped ham into the casserole and make it a one-pot dish for a weeknight dinner. How ever you make it, it will be one of your family’s favorites.

Ingredients
- 1 bag refrigerated hash browns (I use Simply Potatoes brand.)
- 1 can condensed cheese soup
- 1/2 cup melted butter
- 1 cup sour cream
- 2 cups shredded colby cheese
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 350°
- Spray a large casserole dish with non-stick cooking spray.
- In a large bowl, mix all ingredients except colby cheese.
- Stir in 1/2 of the cheese.
- Pour mixture into casserole dish.
- Top with the remaining cheese.
- Bake for 45 minutes.
- Let cool for 10-15 minutes before serving.
