- Cheddar Cheese – Use a medium to mild cheddar for this recipe because so the cheddar doesn’t overpower the pimentos.
- Pimentos – You can buy a small jar of pimentos in any grocery store. They are in the pickle section. I keep a jar in my pantry so I can whip up Southern Pimento Cheese whenever I’d like.
- Cayenne Pepper – This is what I call an optional ingredient. But I recommend that you try it the first time because it’s just a small amount and it really doesn’t make the spread too spicey. On the other hand, if you’d like a bit more spice, feel free to add more cayenne pepper.

- Mix together the cream cheese and mayonnaise until the mixture is smooth and creamy.
- Add the spices, pimentos, and cheddar and mix again, just enough to incorporate all of the ingredients.

Southern Pimento Cheese
Ingredients
- 8 ounces of cream cheese – softened at room temperature
- 20 ounces 2.5 cups shredded mild cheddar cheese
- 1/4 cup mayonnaise
- 1 4 ounce jar of diced pimentos – strained save 1 TBS of the liquid
- 2 TBS pimento liquid
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon cayenne pepper

Kris, I think it would last 7-10 days but mine is usually all gone within 2-3 days.
