Tortellini Spinach Pasta Salad is a cold salad that comes together in a snap. Just a couple of store-bought ingredients with fresh spinach and you have the perfect summer salad.

What if I told you, this salad is literally the easiest salads you’ll ever make? You might not believe me because it tastes like you spent hours preparing it. Welcome to the world of Krazy Kitchen Mom – great recipes that are easy and taste amazing.

Store-bought ingredients

I used convenient store-bought ingredients for this recipe and the hardest part is cutting the sun-dried tomatoes, only because I couldn’t find the pre-cut julienne sliced version. Here are the ingredients:

  1. Frozen Tortellini (I used 1/2 bag of cheese tortellini and a 1/2 bag of spinach tortellini)
  2. Packaged Baby Spinach
  3. Pre-made Packaged Pesto
  4. Mozzarella Pearls
  5. Deli sliced Prosciutto
  6. Sun-Dried Tomatoes (DO NOT USE the smoked style!)
  7. Pine Nuts

See how easy this is…everything right from the package – but don’t worry – after one bite, you will LOVE LOVE LOVE this salad.

Buying Prosciutto

I’ve shared this tip before, but it’s so good, I’m going to repeat myself! If you’ve ever bought Prosciutto, you know it’s very expensive and can run up to $20 – $25 per pound. But let’s face it, when was the last time you actually needed to buy a full pound of prosciutto? My tip for buying prosciutto is to buy just as much as you need. Skip the prepackaged version and head right to the deli. For this recipe, I bought 3 slices (cut thin). That’s all…just 3 slices.

Krazy Kitchen Mom Tip

My tip for this recipe is to freeze the extra pesto sauce. Prepared pesto can be expensive but you can easily freeze it for up to 6 months. I usually use pesto in small amounts, say 3-4 tablespoons at a time. So I place 3-4 tablespoons of prepared pesto into the snack-sized ziptop bags and freeze them. When you want to use it, just pull a bag out of the freezer and hold it between your hands and it will thaw very quickly. Now you have fresh pesto ready to go all the time.

Description

Tortellini Spinach Pasta Salad is a cold salad that comes together in a snap. Just a couple of store-bought ingredients with fresh spinach and you have the perfect summer salad.


Ingredients

Scale
  • 1 bag of Frozen Cheese Tortellini
  • 1 bag of Baby Spinach
  • 6 TBS of Pre-made Packaged Pesto
  • 1/2 Cup Mozzarella Pearls
  • 3 Deli slices of Prosciutto torn into small pieces
  • 10 Sun-Dried Tomatoes – diced (DO NOT USE the smoked style!)
  • 1/4 Cup Pine Nuts

Instructions

  1. Cook the Tortellini according to the package instructions.
  2. Rinse the tortellini and set it in the refrigerator for 10 minutes to cool.
  3. When the tortellini is cool, arrange the spinach and tortellini on a serving platter.
  4. Add the mozzarella pearls and sundried tomatoes.
  5. Tuck in the small piece of Prosciutto.
  6. Drizzle small amounts of the pesto and top with pine nuts.
  7. Serve cold or at room temperature.

Notes

Make-ahead tip: Cook the tortellini a day ahead and store it in the refrigerator so that it is nice and cold.
