Ingredients
- 2 lbs. beef roast – any type of roast beef will work in this recipe
- Salt
- Pepper
- 1 cup beef broth – substitute beef stock if needed
- 3 tbsp Worcestershire sauce
- 6-8 pepperoncini peppers
- 2 tbsp pepperoncini juice from the jar
- ¼ cup cocktail onions
- 1 envelope brown gravy mix
Let’s Make Slow Cooker Roast Beef
- Add beef broth, Worcestershire sauce, and pepperoncini juice to the slow cooker.
- Liberally salt and pepper on all sides of the roast beef.
- Place beef in the slow cooker.
- Top with pepperoncini peppers and cocktail onions.
- Cover and cook for 4-6 hours until the beef is easily shredded with two forks.
- Once the beef is finished cooking, remove it from the slow cooker and shred it using two forks.
- Place the ½ cup of the beef cooking liquid into a stove-top pan and heat it on medium-high heat.
- Prepare the gravy mix per package instructions and whisk it into the pan with beef liquid.
- Continue whisking until the gravy starts to thicken. Reduce it to a simmer. Taste and add salt and pepper if needed.
- Serve shredded beef on mashed potatoes and top with gravy mix.
