Description
Red, White and Blue Spinach Berry Salad is the perfect summer salad, made with fresh ingredients. We like it best with a homemade poppyseed dressing.
Ingredients
For the Salad:
- Baby Spinach
- Blueberries
- Strawberries – quartered
- 3oz. goat cheese (I used honey flavored goat cheese)
- 3oz. pecans – broken but not crushed
For the Poppyseed Dressing:
- 1/2 mayonnaise
- 1/4 cup rice wine vinegar
- 3 TBS granulated sugar
- 1–2 TBS milk
- 1/4 teaspoon dry mustard
- 3 TBS poppyseed
- 1/2 teaspoon salt
Instructions
For the Dressing:
- Mix all the ingredients in a mason jar and shake for 1-2 minutes.
For the Salad:
- In a large bowl, toss spinach and berries.
- Add small pieces of goat cheese and the pecans
- Toss with the salad dressing.
- Serve immediately.
