Ingredients
- 1 tbsp extra virgin olive oil
- 1 teaspoon sesame oil
- 1 onion – diced
- 2 carrots – peeled and diced
- 1 red bell pepper – diced
- 1 extra-large egg
- 3 cups cooked pork – diced
- ½ bag frozen peas
- 10 oz. bag frozen cauliflower rice
- ¼ cup soy sauce
- Sesame seed for garnish
Let’s Make Cauliflower Pork Fried Rice
- Remove the peas from the freezer and set them aside.
- Cook the cauliflower in the microwave per the package directions. Set aside when finished.
- Dice the onion, carrot, and bell pepper into bite-sized pieces.
- Beat the egg.
- Heat extra virgin olive and sesame oil in a large skillet on medium heat.
- Add onion, carrots, and bell pepper, and cook for 5 minutes until the vegetables are beginning to soften.
- Add the beaten egg and scramble it with the vegetables.
- Add the pork and cauliflower.
- Add soy sauce and gently stir to combine.
- Add frozen peas and cook mixture for 5-7 minutes.
- Garnish with sesame seeds and serve.

- Substitute rotisserie chicken or leftover chicken for the rice or omit the meat altogether.
- The leftovers are nutritious and delicious for breakfast.
