Let’s Make Blueberry Baked Oatmeal
- Preheat oven to 350°.
- Spray a baking dish with non-stick cooking spray.
- Mix oatmeal, cinnamon, baking powder, baking soda, and salt in a bowl.
- In a separate bowl, add eggs, melted butter, brown sugar and sugar, and applesauce. Whisk until fully combined.
- Add the oat mixture to the wet ingredients and stir until fully combined.
- Gently fold in blueberries with a spatula.
- Transfer to prepared baking dish and top with storebought granola or slivered almonds.
- Bake uncovered for 25 minutes.

- To spray and baking dish or pan with non-stick spray, open the dishwasher door, set the baking dish on the door, and spray. No clean up needed and the dishwasher will wash away any excess spray next time it’s run.
- Store covered in the refrigerator for 4-5 days. To reheat, microwave one scoop at a time for 30-60 seconds.
- Make it your own – add any type of berries and nuts.
- I like to serve this with plain Greek yogurt and blueberry sauce or quick blueberry-apple sauce.

Make Ahead Blueberry Baked Oatmeal

- 4 cups old fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 cup sugar
- 1/4 cup brown sugar
- 2 eggs
- 1 cup unsweetened applesauce
- 1/2 cup store-bought granola or slide almonds for topping
Quick Blueberry-Apple Sauce
- 1/2 cup blueberries
- 1/4 cup unsweetened applesauce
- 1 teaspoon honey
Instructions
- Preheat oven to 350°.Spray a baking dish with non-stick cooking spray.
- Mix oatmeal, cinnamon, baking powder, baking soda, and salt in a bowl.
- In a separate bowl, add eggs, melted butter, brown sugar and sugar, and applesauce.
- Whisk until fully combined.
- Add the oat mixture to the wet ingredients and stir until fully combined.
- Gently fold in blueberries with a spatula.
- Transfer to prepared baking dish and top with storebought graonla or almond slices.
- Bake uncovered for 25 minutes.
Quick Blueberry-Apple Sauce
- Place all ingredients into a small stovetop pan.
- Bring to a boil for 1 minute.
- Reduce to a simmer for 3-5 minutes.
- Cool at room temperature.
