Meatballs are always a big hit. I make a large batch of these – a few very large that we eat the day I make them and then some smaller ones that I cook and freeze for a quick dinner before the gym (yes I said gym!) or for my husband when I am traveling for business. The reason I mention “gym” and “meatballs” in the same post is that I make them with a mixture of very lean ground beef and ground turkey – an easy way to cut down on fat and calories. And with the right amount of seasoning and Sunday Sauce, no one will even know.
1 lb. lean ground beef
1 lb. ground turkey, preferable turkey breasts if you can get them
1/3 cup Italian Panko breadcrumbs
1 egg, beaten
1 TBS Italian seasoning
1/4 cup of Sunday Sauce (or tomato sauce)
1/2 diced onion
1/4 diced green pepper (optional)
1/4 cup finely grated parmesan cheese
Preheat oven to 350 degrees
In a large bowl, fold together all ingredients. Be careful not to overmix the meat mixture. Once the ingredients are mixed together, roll equal sized balls in your hands and place on baking sheet pan.
For very large balls, cook for 25 minutes on each side for a total of 50 minutes.
For smaller balls, cook for 30 minutes.
