Greek Chicken Salad is made with leafy lettuce, feta cheese, olives, cucumbers, tomatoes, onion, bell peppers, and celery. It’s topped with Greek seasoned grilled chicken and drizzled with Greek dressing.
I love a salad that is more than a salad. By that, I mean a salad that is a meal.
My Greek Chicken Salad is just that – it’s a meal salad and it’s also a beautiful meal salad.
I mean just look at those colors! I’m just happy looking at it and I can tell even before I take a big bite that it’s going to burst with bright fresh flavors.
Greek chicken salad ingredients
This salad appears to have a lot of ingredients, but it’s mostly fresh veggies and some grilled chicken.
- Grilled Chicken – I rubbed my chicken lightly with some olive oil and then seasoned it with Greek Seasoning. My favorite Greek Seasoning brand is called Cavender’s.
- Leafy Lettuce – This is not a traditional Greek salad ingredient. I use it because any time I can take advantage of any time I can sneak in leafy greens. I also like the way it dresses up the salad.
- Tomatoes – I used grape-sized tomatoes and cut them into thirds.
- Cucumber – Whenever I am using cucumber in a salad, I cut them lengthwise and scoop out the seed with a spoon.
- Kalamata Olives – These olives are also called Greek Olives. If you cannot find Kalamata olives you can substitute with black olives (although they do taste different).
- Celery – Again, this is not a traditional ingredient in a Greek salad. But they add a bright crispness to this salad and any salad.
- Bell Pepper – You can use any color bell pepper you’d like. I chose red bell pepper because it was the best-looking pepper in the market the day I bought them.
- Red Onion – I’m not necessarily fond of red onions because it has such a strong bitter taste. I’ve found that if you soak them in cool water for about ½ hour before you use them, it cuts the bitterness.
- Feta Cheese – I buy and use block feta cheese; not the crumbly type. Block feta cheese holds up better, it also has a saltier taste. My mantra for buying cheese is to spend a little extra money and get good cheese. You don’t have to spend a lot or buy top of the line, but you can really taste the difference if you buy good cheese.
- Greek Salad Dressing – You can certainly use store-bought or you can make your own Greek salad dressing. Here’s my recipe for Greek Salad Dressing.
What to serve with Greek salad
Obviously, you can make this recipe which is a meal on its own. But, if you want to just make the salad, here are a few ideas on how to serve it.
- Try topping Flatbread or Naan with this salad or try my Greek Salad Flatbread Pizza.
- Wrap it up! Wrap these ingredients in a flavorful wrap. It would be a great grab-and-go lunch.
- Greek salad is the perfect healthy side dish for grilled chicken, fish, and steak.
- Make the salad even more healthy by adding some quinoa.
- Chop the salad ingredients smaller and serve it as a dip. Use pita chips to scoop up all the delicious goodies.
Greek Chicken Salad
Ingredients
For the Salad
- 2 grilled chicken breast
- ½ bag leafy lettuce
- ½ pint cherry tomatoes - cut in half or thirds
- ½ English cucumber - seeds removed and diced
- 2 celery stalks - sliced thin
- 1 bell pepper - diced
- ½ red onion - sliced thin
- 4 ounces feta cheese - diced into cubes
- 2-3 ounces Greek Salad Dressing
For the Grilled Chicken
- 1 TBS extra virgin olive oil
- 1 TBS Greek Seasoning
For the Greek Salad Dressing
- 1/4 cup extra virgin olive oil
- 1/3 cup red wine vinegar substitution: apple cider vinegar
- 3 TBS lemon juice
- 1 TBS honey
- 1 teaspoon Greek Seasoning
- 1 teaspoon ground oregano
- 1/4 teaspoon black pepper
Instructions
For the Greek Salad Dressing
- Add all of the ingredients to a jar with a secure lid.
- Shake well.
- Refrigerate until ready to use.
For the Grilled Chicken
- Pat the chicken breasts dry with a paper towel
- Rub ½ the olive oil on both sides of each chicken breast.
- Drizzle ½ the Greek Seasoning on both sides of each chicken breast.
- Grill until you have an internal temperature of 164°
- Rest after grilling.
- Slice before adding to the salad.
Assemble the Salad
- Place the lettuce on a large plate or platter
- Add the tomatoes, cucumber, olives, celery, and green pepper to a small bowl and toss with 2 TBS Greek salad dressing.
- Pour the dressed vegetables on top of the lettuce.
- Add the onions and feta cheese.
- Place the chicken breast on top of the entire salad.
- Serve with pita bread or Naan bread.
