Ingredients

Let’s Make Greek Salad Flatbread Pizza

  1. Brush one side of the flatbreads with extra virgin olive oil
  2. Place them on a cookie sheet and bake for 7-9 minutes.
  3. Remove the flatbreads from the oven and top them with mozzarella cheese and grilled chicken.
  4. Place them back into the oven for another 6 minutes.
  5. While flatbreads are cooling, mix the lettuce, tomatoes, cucumbers, olives, and feta cheese.
  6. Toss the salad with the Greek salad dressing.
  7. Divide the salad between the 2 flatbreads.
  8. Garnish with fresh oregano and serve with pepperoncini peppers.

Krazy Kitchen Mom Tips

  • If you cannot find flatbread in your grocery store, large pita bread rounds will also work with this recipe.
  • Because all ovens are different, watch the flatbread carefully during the first bake; it should be slightly browned and crispy which may take more or less time.
  • To make this recipe vegetarian, simply omit the chicken.

Ingredients Method

Ingredients
  

  • 2 small flatbreads
  • 1 tbsp extra virgin olive oil
  • 2 chicken breasts – grilled and sliced into bite-sized pieces
  • 3/4 cup mozzarella cheese
  • 2 cups mixed greens lettuce
  • 10 kalamata olives – halved
  • 10 cherry tomatoes – halved
  • 1/4 cup feta cheese – cubed
  • 1/4 of a cucumber – diced
  • 4 Peperoncini peppers
Greek Salad Dressing
  • 2 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon minced garlic
  • 1 squeeze fresh lemon juice
  • salt and pepper

Method
 

  1. Preheat oven to 400°
  2. Brush one side of the flatbreads with extra virgin olive oil
  3. Place them on a cookie sheet and bake for 7-9 minutes.
  4. Remove the flatbreads from the oven and top them with mozzarella cheese and grilled chicken.

    This flatbread looks absolutely delicious! I love the idea of combining pizza with Greek salad. Definitely going to try this recipe.
