My Mom used to make Cheesy Au Gratin Potatoes all the time and they were irresistible. A creamy cheese sauce covering tender slices of potato – so good! I used to think that they were very difficult to make when, in fact, they are really very easy.
What does au gratin mean?
Au Gratin means a dish that is browned and topped with breadcrumbs or cheese or a combination of both. I used a cheese sauce and then also topped the casserole with cheese. The word itself is French meaning a baked casserole. If you omit the cheese in this recipe and just have a cream sauce, the dish is known as Scalloped Potatoes. You might also hear the dish called Potatoes Au Gratin.
How to make Cheesy Au gratin potatoes
- You begin by making a roux which is equal amounts of melted butter and flour. This will be the thickener for your cheesy sauce.
- Next, you add the milk and when it gets warm you add the cheese. There you go – now you have a delicious cheesy sauce.
- Slice the potatoes and onion equal thickness. If you have a mandoline like I do its very easy to get them equal sizes. If you don’t just take your time and make sure you use a sharp knife to slice them thin.
- And finally, you arrange the potatoes and onions in a baking dish. Cover them with foil and bake them at 400°

Ingredients
- 4 large russet potatoes, washed, peeled and sliced thin. (These can be sliced by hand but if you have a mandolin you can get a much more consistent slice.)
- 1/2 large onion, peeled and sliced into thin rings (same size as the potatoes)
- 3 TBS flour
- 3 TBS butter
- 2 cups of milk
- 2 cups of shredded sharp cheddar cheese
- 1 teaspoon dry mustard
- 1/2 teaspoon ground sage
- 1/4 teaspoon nutmeg
- Salt and Pepper to taste
Instructions
- DIRECTIONS
- Preheat oven to 400 degrees.
- Spray a large casserole dish with non-stick cooking spray.
- Start with potatoes and place a layer covering the bottom of the dish, next layer with onions, again with a layer of potatoes and continue until all onions and potatoes are in the casserole dish. Set aside.
- In a saucepan on the stovetop, melt butter on medium, add flour and whisk, about 2 minutes, add milk and continue whisking constantly until the mixture begins to thicken (this may take 3-5 minutes).
- Add dry mustard, ground sage, and nutmeg.
- Add the cheese and once the cheese is fully incorporated, remove from heat.
- Pour the cheese mixture over the potato/onion layers.
- Cover with foil and bake for 1.5 hours.
- Remove from oven, remove foil, and place it back into the oven on broil until they brown.
