  • 4 tbsp butter
  • ½ cup flour
  • ¼ cup sugar
  • ¼ cup oats
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon

  • 1-1/4 cup milk
  • 5 eggs
  • 2 tbsp sugar
  • 1 tbsp vanilla bean paste or vanilla extract
  • 1 tbsp ground cinnamon
  • pinch of salt
  • 5-6 cups of sturdy bread cut into cubes

Streusel Topping

  1. Melt the butter in the microwave for 30 seconds.
  2. Fold in the other ingredients.
  3. Roughly mix – you want large clumps and not a smooth paste.
  4. Place in the refrigerator to firm while you prepare the muffins.

Muffins

  1. Preheat oven to 350°.
  2. Spray a muffin tin with non-stick cooking spray.
  3. Cut bread into large-sized cubes.
  4. Whisk eggs, milk, sugar, vanilla and cinnamon.
  5. Add the bread to the bowl and gently toss to coat all of the bread.
  6. Divide the mixture between the muffin cups.
  7. Divide the streusel and top each of the muffins.
  8. Bake for 25-30 minutes.
  9. Cool for 5 minutes and serve.
