No-Bake Tropical Cookie Balls

These no-bake, bite-sized treats are a great way to satisfy your sweet tooth with the flavors of the tropics.

Ingredients 

  • 1/2 box of Nilla Wafers I use the tiny ones because they are easier to crush
  • 6 tbsp frozen orange juice concentrate
  • 2 cups powdered sugar
  • 1.5 tbsp melted butter
  • 1 cup shredded sweetened coconut

Instructions

  • Place Nilla Wafers in a food processor and pulse until cookies are crushed.
  • Place crushed cookies in a large bowl.
  • Melt the butter in the microwave.
  • Add butter, orange juice, and powdered sugar to the bowl with the crushed cookies.
  • Mix together with a hand mixer.
  • Fold the coconut into the mixture.
  • Roll the dough into small balls and then roll them in sanding sugar. Place in the freezer for 1 hour.

Notes

Krazy Kitchen Mom Tips:
  • Roll the balls in extra coconut before freezing, rather than sanding sugar if preferred.
  • Do not store at room temperature. These are best stored in the freezer or refrigerator.
