Cube the cheese into bite-sized pieces and place them in a small dish with cherry tomatoes.
Add extra virgin olive oil and lightly salt and pepper. Or if using seasoning, toss with seasoning.
Build skewers by placing two pieces of cheese and two cherry tomatoes on each skewer.
Place the skewers directly on the grill rack or a cast-iron skillet on the grill or stovetop.
Fill the skewers so each side of the cheese cubes is browned. Grill until the cheese starts to melt on the inside and brown on the outside.
