Ingredients 

  • 2 ripe beefsteak tomatoes
  • 2 ripe peaches
  • 2 ounces goat cheese (I use honey-infused goat cheese.)
  • 4-5 sprigs of fresh thyme
  • 1 tbsp blood orange-infused olive oil (Substitution: extra virgin olive oil)
  • 2 tbsp honey

Instructions

  • Slice the peaches and tomatoes into half-moon slices and arrange them on a serving plate.
  • Break the goat cheeses into pieces and place them on top of the peaches and tomatoes.
  • Remove the small leaves from the thyme sprigs and sprinkle them on top of the salad.
  • Drizzle the salad with honey and olive oil.

Notes

Krazy Kitchen Mom Tips
  • Place the goat cheese in the freezer for 5-10 minutes before cutting it to make it easier to cut off the desired size.
  • You can make this one large serving or make individual-sized salads.
  • This salad can also be made ahead by slicing the peaches and tomatoes and storing them in the refrigerator. When you are ready to serve, add the goat cheese, thyme, honey, and olive oil.
