Summer Freshness
This is the easiest way to enjoy fresh summer produce. The peaches and tomatoes are juicy and exploding with freshness. The goat cheese and thyme add a savory note while the honey and olive oil pull it all together.
Ingredients
Goat cheese – my favorite type of goat cheese is honey goat cheese. Plain goat cheese is a great substitute if you cannot find the honey version.
Honey – use your favorite brand and type of honey. I am a bit picky about my honey and I LOVE this Black Sage honey. *Note: if you happen to find black sage honey, buy it right away. This particular type of honey is only available every ten years.
Let’s Make Peach Tomato Salad
- Slice the peaches and tomatoes into half-moon slices and arrange them on a serving plate.
- Break the goat cheeses into pieces and place them on top of the peaches and tomatoes.
- Remove the small leaves from the thyme sprigs and sprinkle them on top of the salad.
- Drizzle the salad with honey and olive oil.

- Place the goat cheese in the freezer for 5-10 minutes before cutting it to make it easier to cut off the desired size.
- You can make this one large serving or make individual-sized salads.
- This salad can also be made ahead by slicing the peaches and tomatoes and storing them in the refrigerator. When you are ready to serve, add the goat cheese, thyme, honey, and olive oil.

- 2 ounces goat cheese (I use honey-infused goat cheese.)
- 4-5 sprigs of fresh thyme
- 1 tbsp blood orange-infused olive oil (Substitution: extra virgin olive oil)
