Honey and Thyme Grilled Apricots

Grilled apricots make a simple and sweet treat using fresh apricots and burrata cheese. It's the perfect combination of creamy, sweet, and crunchy.

Ingredients 

  • 8 fresh apricots halved and pits removed.
  • 2 tbsp extra virgin olive oil
  • 5-6 fresh thyme sprigs
  • 2 tbsp honey
  • 1 French baguette
  • 1 round of fresh burrata cheese

Instructions

To grill apricots

  • Slice apricots in half.
  • Preheat grill to 350-400°. (Stove top method, grill apricots in a grill pan on the stovetop.)
  • Brush the inside of each half with olive oil.
  • Grill oiled-side down for 5-6 minutes.
  • Flip and grill the outside for three minutes.
  • Remove from grill, sprinkle with fresh thyme, and drizzle with olive oil.

To grill baguette

  • Slice the baguette.
  • Brush each slice with the remaining olive oil.
  • Place slices on the grill face down until they toast. (Oven method: Preheat oven to 375°, place sliced and oiled baguette on a cookie sheet, and bake for 10-15 minutes until toasted.)

To Assemble

  • Slice grilled apricots and burrata into bite-sized pieces.
  • Top each slice of baguette with a piece of cheese and top with a piece of grilled apricot.
