For the veggies:

  • 1 Carrot peeled
  • 1 zucchini – washed with skin on
  • 1 English cucumber – washed with skin on
  • 12 yellow and red cherry tomatoes – cut in half

For the vinaigrette:

  • 1/3 cup extra-virgin olive oil
  • 3 TBS rice wine vinegar
  • 2 TBS honey

  • 1/4 teaspoon black sesame seeds
  • 1/8 teaspoon ground ginger
  • Salt and pepper

For the veggies:

  1. Follow the spiralizer directions to cut the spirals.

For the vinaigrette:

  1. In a bowl, add olive oil, vinegar, honey, soy, sesame seeds, ginger and salt, and pepper.
  2. Whisk until the dressing emulsifies (or comes together).

For the salad:

  1. Place the veggies in a large bowl; salt and pepper lightly.
  2. Toss the salad with small amounts of the dressing at a time.
  3. Taste as you go so that you have just a right amount of dressing, but don’t overdress the salad.
