I did it! I jumped on the spiral veggie bandwagon and I am very happy I did. These veggies are not only fun to eat, they are certainly fun to make. My husband joined me with this one and the truth I think he had more fun than I did.
I have a the Spiralizer attachment for my Kitchen Aid Stand Mixer, but if you are trying these for the first time, you can buy an inexpensive one for about $1o. If you have a Stand Mixer and can make the investment, it’s well worth it. It’s easy to set up and you have spiral anything in minutes.

Spiral veggies in a lite vinaigrette.
Ingredients
For the veggies:
- 1 Carrot peeled
- 1 zucchini – washed with skin on
- 1 English cucumber – washed with skin on
- 12 yellow and red cherry tomatoes – cut in half
For the vinaigrette:
- 1/3 cup extra-virgin olive oil
- 3 TBS rice wine vinegar
- 2 TBS honey
- 1 teaspoon low sodium soy sauce
- 1/4 teaspoon white sesame seeds
- 1/4 teaspoon black sesame seeds
- 1/8 teaspoon ground ginger
- Salt and pepper
Instructions
For the veggies:
- Follow the spiralizer directions to cut the spirals.
For the vinaigrette:
- In a bowl, add olive oil, vinegar, honey, soy, sesame seeds, ginger and salt, and pepper.
- Whisk until the dressing emulsifies (or comes together).
For the salad:
- Place the veggies in a large bowl; salt and pepper lightly.
- Toss the salad with small amounts of the dressing at a time.
- Taste as you go so that you have just a right amount of dressing, but don’t overdress the salad.
- Serve immediately
Variations: add grilled chicken or shrimp
