Mix powdered sugar, lemon curd, and cream cheese with a hand mixer until smooth and creamy.
Slice strawberries.
Spread one-half of the croissants with some of the cream cheese mixture.
Layer strawberries on top of the cream cheese and put the tops on the croissants.
Place croissants on a grill pan or cooling rack with a pan or parchment below it so they are ready to be glazed.
Divide the remaining powdered sugar and lemon juice into two small bowls.
Add yellow food coloring to one bowl and pink to the other and stir.
Add additional food coloring as needed to obtain the desired color.
Drizzle the pink and yellow glaze over the croissants.
