Homemade Mimosa Butter Cookies

Simple little butter cookies with a hint of orange flavor. Pipe the cookies with a piping tip or cookie press or use a cookie scoop.

Ingredients 

  • 2-1/2 cups flour
  • 1 cup butter - softened at room temperature
  • 1-1/4 cups powdered sugar
  • zest of 2 oranges
  • 1/8 teaspoon salt
  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup Prosecco or champagne

Instructions

  • Preheat oven to 350°.
  • Add butter, powdered sugar, orange zest, and salt to a mixing bowl and mix until creamy.
  • Add Prosecco and continue mixing on low speed. 
  • Add orange juice and continue mixing on low speed. 
  • Add flour and mix on low for 1 minute, increase speed to medium and mix until fully combined. 
  • Remove half of the cookie dough mixture and set it aside. 
  • Add a few drops of orange food coloring to the mixing bowl with half of the dough and mix or stir until the dough turns orange. 
  • Prepare a piping bag or a zip-top bag with a large star tip. 
  • Transfer the orange dough and the non-colored dough to the piping bag side by side. 
  • Pipe the dough in a circle to form the cookies. 
  • Add sprinkles and bake for 11-14 minutes.

  • To make drop cookies, skip steps 8-10 above and simply form cookies with a teaspoon or a cookie scoop. 
  • These cookies can also be used with a cookie press. 
  • Store cookies in an airtight container on the counter for up to 5 days.
