Oven-Baked Chicken Parmesan

This is a healthier version of traditional chicken parmesan because it's baked and not fried. The chicken is crispy on the outside and moist and tender on the inside.

Ingredients 

  • 2 chicken breasts
  • 1 cup seasoned Panko bread crumbs
  • 1/3 cup Mayonnaise
  • 1 cup finely greated parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup marinara sauce
  • 8 slices fresh mozarella cheese

Instructions

  • Preheat oven to 400.
  • Slice chicken breast through the middle to make four thinner breast pieces.
  • Slather mayonnaise on both sides of the chicken.
  • Mix Panko, parmesan cheese, salt, pepper in a large flat dish or plate.
  • Dredge both sides of the chicken breasts through the bread crumb mixture pressing down to cover the entire breast.
  • Place the four breasts on a parchment paper-covered cooking sheet and back for 25-30 minutes until golden brown. Watch carefully so the parmesan coating doesn't burn.
  • Remove the chicken from the oven and spoon 1 -2 tablespoons of the prepared marinara sauce on each breast.
  • Set the oven to broil.
  • Top each breast with 2 slices of mozzarella cheese.
  • Broil for 2-3 minutes, watching carefully, until cheese is melted.

Notes

Krazy Kitchen Mom Tips:
  • For a full meal, serve the chicken with a side of spaghetti or buttered noodles, and garlic bread.
  • This chicken also makes a fantastic chicken parmesan sandwich. Simply place a piece of chicken between two slices of an Italian loaf or hoagie roll, and slather it with marinara sauce.
  • I recommend leaving the oven door cracked when using the broiler to finish a recipe. That way you can watch it carefully and remove it immediately if needed.
