Blackberry Melon Salad with Honey Lime Dressing

This salad is a simple combination of bright refreshing flavors. It's the perfect end of summer side dish for any get together.

Ingredients 

For Salad

  • 1 cup mixed greens
  • 1/2 honey dew melon
  • 1/2 pint blackberries
  • fresh mint leaves for garnish

For Honey Lime Dressing

  • 2 tbsp extra virgin olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 1/4 teaspoon cracked black pepper

Instructions

  • Slice the melon in half and remove and discard the seeds using a large spoon.
  • Use a melon baller to cut pretty circles of the melon flesh. If you don't have a melon baller, slice the melon into bite-sized pieces.
  • Place mixed greens in a large serving dish or on a platter.
  • Top the greens with the melon balls or pieces.
  • Add the blackberries. If the blackberries are very large, slice them in half or in thirds so they are fork-sized bites.
  • Mix the lime juice, honey, and olive oil to make the dressing.
  • Drizzle the dressing over the entire salad.
  • Add cracked black pepper.
  • Garnish with fresh mint leaves

Notes

How to Select a Honey Dew Melon
  • Weight matters - select a melon that is heavy for it's size.
  • Give it a squeeze - the melon should be firm and not mushy.
  • Use your nose - smell the end of the melon that came off the vine. It should smell sweet.
  • Look at the color - a ripe melon will be a creamy yellow, almost white color. If the melon is green don't buy it.
